Interesting article. I noticed the difference in spelling the other day when I left a comment. Normally I use "pimento" (my cookbooks do too), but when I checked the jar in my pantry it said "pimiento". I guess either is correct. Now I want to check the pre-made stuff in the store to see what spelling they use.
can't stand the pre-made stuff - but a good homemade recipe and I will chow down. My son and hubby don't really like it though - which means more for me!
