Mango Salsa


Last week Joan and I made this recipe and it was delicious.



Mango Salsa Recipe

1 ripe mango, peeled, pitted, and diced (about 1 1/2 cup)
1/2 medium red onion, finely chopped
1 jalapeno chile, minced (we omitted the ribs and seeds in order to have a milder flavor)
1 small cucumber, peeled and diced (about 1 cup)
3 Tbsp fresh cilantro leaves, chopped
3 Tbsp fresh lime juice
salt and pepper to taste

Combine all ingredients and serve.


We doubled the recipe and ate some of it with tortilla chips. Then we cooked turkey burgers and topped each one with 1/4 cup of the salsa. It was very fresh and light.

that sounds great! I might make this with peaches when they appear this summer.

Great idea! I think peaches would make a good substitute for mangoes in this!
